Dark, rich and luxurious Organic Forest Honey from beekeeper Luisa from the beautiful wilderness of Asturias

The set consists of a 960g jar of this beautiful honey, in a lovely jute bag with easy to carry handle, and a hand crafted wooden honey dipper.

This summer was very dry, which has resulted in a forest honey that is thicker than usual and has a more intense flavour. In our view it is a vintage year for this honey, it is the best forest hoeny we have tasted from Luisa, Olaya and Mario.

Raw Organic Forest Honey/*Active 17+: The collective forest trees are known as bosque in Spanish. These can include chestnut and oak as well as beech and pine. You will also find that forest flowers give an added layer of subtlety to these honeys - such as blackberry,  The large trees exude a sweet sap which the bees feed on, sometimes with the help of aphids who drill into the tree bark allowing the sap to flow out more freely. Asturias is a magnificently wild place, where the bees can go about collecting nectar and honeydew without coming into contact with pesticides from farming or pollution from industry.  The dark rich treacly flavour of the Forest honey is especially enticing. You can taste the forest in it.

What does "Active" mean in the product title?: We send some of our honeys to a lab for a "Total Activity test". This test measures the total antimicrobial activity of a honey. This is done by testing a solution of a honey on a lab plate against the Staph Aureus bacteria. The honey is graded according to the amount of bacteria that the honey solution kills. Generally the range that we see will be between 10 and 25 plus. This type of test is similar to the test used to grade Manuka Honey. 

What does it taste like: Starts with an aroma of sticky toffee pudding. On first taste, it has deep, full bodied, slightly smoky, earthy tones, delivering a more savoury taste than some other honeys. The rich main flavour is very full-bodied and deep-tasting, similar to a pomegranate molasses.

The Beekeepers: This honey comes from beekeeping family Luisa, her daughter Olaya and son Mario. They are beekeepers with a passion for producing raw honey of the very highest quality - with a lot of attention to detail. Their bees fly in the pure air of the Asturian mountains and valleys of northern Spain.  Here they craft totally raw honey, mainly dark varieties. The forest honey is created in the forests that creep up the side of the mountains
