If you would like to spread the cost of purchasing one of these large tubs then please select the Klarna payment option at the checkout.

Thomas' Raw  Organic Greek Mountain Oak honey has a deliciously rich and mineral treacle flavour with hints of cooked apples and plums.  The aftertaste lingers only briefly with a slight sourness.  The aroma is similarly fruity, reminding us of cold spiced fruit sauces.  The flavour and aroma make us think this could go very well with a fruitcake or Christmas pudding.

What does "Active" mean in the product title?  We send some of our honeys to a lab for a "Total Activity test". This test measures the total antimicrobial activity of a honey. This is done by testing a solution of a honey on a lab plate against the Staph Aureus bacteria. the honey is graded according to the amount of bacteria that the honey solution kills. Generally, the range that we see will be between 10 and 25 plus. This type of test is similar to the test used to grade Manuka Honey.  The main antibacterial activity is caused by a bee enzyme that creates hydrogen peroxide in the honey. Please bear in mind that the Activity Level is at its highest when we test it and will decrease over time. This will happen faster if the honey is exposed to light and heat. Storing the honey in a dark cool place will help to slow down the rate at which the Activity Level decreases.

Colour: It's very dark, nearly black, with a slight hint of purple.

About the beekeeper: It was brought to us by Thomas, a young Greek beekeeper, who is planning to take over his father's hives, which are in secluded forest glades. He has great enthusiasm for raw honey and natural hive products.

More on honeydew honey: This is a dark thick runny honey it is known as a honeydew, because it is from the sap and resin of the tree not from flower nectar.  Honeydews are high in oligosaccharides, which are known for their prebiotic qualities- aiding digestion.

Please note we cannot accept returns on this honey due to its size. The tin has travelled all the way from Greece so small dents to the tin will often appear.  If your tub or tin arrives slightly damaged and leaking, we are happy to give you a partial refund on the amount of honey you feel has been lost. Unfortunately, we cannot replace whole tins or tubs unless more then 50% of the honey has been lost. We would then request you send us pictures so that we can assess the damage and agree the replacement.

Please know that raw honey does crystalise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.
