The Raw Organic Greek Chestnut Honey from Mount Athos has a deliciously rich and deep molasses flavour with a bitterness reminiscent of the aroma from freshly brewed coffee. You will still be tasting this honey in your throat 10 minutes and more after you have eaten it. Not for the faint-hearted - so please don't buy if you dislike bitter notes! 

What does "Active" mean in the product title?  We send some of our honeys to a lab for a "Total Activity test". This test measures the total antimicrobial activity of a honey. This is done by testing a solution of a honey on a lab plate against the Staph Aureus bacteria. the honey is graded according to the amount of bacteria that the honey solution kills. Generally, the range that we see will be between 10 and 25 plus. This type of test is similar to the test used to grade Manuka Honey.  The main antibacterial activity is caused by a bee enzyme that creates hydrogen peroxide in the honey. Please bear in mind that the Activity Level is at its highest when we test it and will decrease over time. This will happen faster if the honey is exposed to light and heat. Storing the honey in a dark cool place will help to slow down the rate at which the Activity Level decreases.

About the beekeeper: This honey was brought to us by Thomas, a very talented young Greek beekeeper. 

Thomas was able to get this incredibly rare honey from the Monks of Mount Athos, who have been practicing the ancient monastic tradition of beekeeping for hundreds of years. 

Where it comes from: Mount Athos is both the name of the mountain and the peninsula situated in north-eastern Greece. Also named the "Holy Mountain", it represents an important centre of Eastern Orthodox monasticism.

Colour: It is very dark - with a brown-reddish colour.

More on Chestnut honey: This is a dark thick runny honey which has deep, full bodied, slightly smoky, earthy tones. These deliver a more savoury taste than most other honeys and an element of bitterness in the aftertaste.

The bees love to feed on the sap that comes from the tree as well as the blossoms. The tree lends a beautiful and unique taste to the honey, the nutty flavour carries through as well as a taste a little similar to maple syrup but slightly more rich and malty.  This Chestnut honey has a slightly bitter taste. However, Chestnut honey varies a lot, differing considerably from one area to another. Some are mild, some are bitter.
