This set makes a perfect gift as it embodies all the best elements of beekeeper Antonio's honeys and Greek Thomas.
Who produces the honey? Firstly there's Antonio Simon, a 4thgeneration beekeeper who takes pride in producing honey in a traditional way without adding or taking away anything. Antonio's hives are mainly based in the mountain ranges of north of Madrid. His beekeeping practices and the land he has his hives on have been certified as organic by the Committee of Organic Agriculture in Madrid.
He produces out Oak and Heather honeys which come from the Sierra del Rincon UNESCO Biosphere Reserve, where no chemical treatments are allowed. The trees grow at around 1100 metres in an extremely wild and untouched place.
Secondly, from Thomas, who is a young beekeeper, following in his family tradition of keeping bees. He is able to take advantage of the varied Greek landscapes from the laconian county in the Peleponnese, where his Orange Blossom orginates to the wilds of the island of Euboea (or Evia as we British know it) where the Wild Thyme Honey grows.
Antonio's Raw Organic Oak honey: is a very deep and rich tasting tree honey; it has a fruitiness as well as a deep woody flavour. Tree honey tends to be dark, have a stronger flavour and are less likely to set due to a relatively low glucose content. This Oak is London Honey Awards and a Great Taste Award Winner! This particular oak honey is very dark in colour, almost black. In some cultures, dark honey is very highly valued. It won Platinium in the London Honey Awards and also two stars in the Great Taste Awards.
Antonio's Certified Organic Raw Heather Honey - This is an amazingly deep tasting shrub honey; it has a depth of flavour with a pronounced bitterness similar to dark chocolate or black tea. It comes from the bees feeding on the low lying heather shrubs often on mountainous terrain. Heather is a favourite plant of bees. Despite not being a tree, heather honey has properties of a tree honey, namely its potent taste and dark colour.
Thomas' Raw Organic Orange Blossom honey is more intense than most Orange Blossom honeys. It has the slightly bitter sweetness of the orange jam that surrounds the peel in marmalade. One of the best Orange Blossom honeys we have tasted. Orange Blossom is normally a favourite of children and those who enjoy sweet and sunny honey flavours. It has a citric aroma and a hint of creamy vanilla. A great introduction to the world of raw honey.
Thomas' raw Wild Thyme honey is another beautiful raw honey from our Greek beekeeper, Thomas and his family. It has a mild and grassy foretaste like dry mountain herbs (You can really taste the thyme!), breaking into a large, fruity flavour similar to sweet and sour summer fruits such as raspberries and red currants, then dissipating quickly to a mild and clean finish. Very slight overnotes of the soft sweetness of fennel or aniseed without the strong flavour of liquorice. Strong hints of Greek mountain tea (Ironwort or Shepherd's tea).
The aroma is mellow and caramel sweet, and the mouthfeel is thick and almost oily, similar to sunflower honey.
How Raw Honey is different from Processed Honey - Raw honey generally means the honey has not been processed, it has come from the hive to the jar with minimal interference. Most supermarket honey is highly processed to make it look more attractive, usually it has been largely drained of pollen, heated and blended. Raw honey tends to vary from batch to batch, this is because it is not processed in a factory, filtered or heated to look homogeneous. Raw honey changes with the season and climate, the soil, what the bees feed on, and the nature of the colonies.
Crystallisation:- Please know that raw honey does crystallise and is a natural process of raw honey (therefore we cannot except returns on honey that may have crystallised). We indicate on the website the state of each honey - either runny or crystallised but be aware this is to the best of our knowledge and the state can change quickly. We only supply raw honey because we believe this is how all honey should be. If you don't want your honey to crystallise then raw honey probably isn't for you.
