Thomas says this has been a very good year for Oak honey. It is the thickest we have ever seen at 13.6% moisture. That is exceptionally low and creates a super intense flavour.

Just arrived with us is Thomas' Mountain Oak, Red Fir, as well as Orange Blossom (from the southern Greece orange groves in the Peloponnese),the rare Vanilla Fir honey and Wild Thyme.

Firstly, let me say, his Oak batch is unlike any batch of Oak we have received before.

A few weeks ago, Claire was with Thomas in the mountains, visiting the Oak hives.

Whilst she was there Thomas shared that it had been a really good year for Oak honey production. (Then a lab analysis showed the moisture level is 13.6% — the lowest we

have ever seen in an Oak honey.
This makes for a deep and rich concentrated flavour.)

Then last week, Claire was at our warehouse for a special moment—the arrival of Thomas's new season's honey from Greece.

She'd seen it in Greece, packed on to the pallets and was excited to see it arrive in the UK.

Let me tell you, we’ve been eagerly waiting for these pallets - with the Oak and the bold Red Fir.

Also Vanilla Fir, Wild Thyme, Orange Blossom, and Pine honeys – was with the Oak.

Here's details on how you will find the flavour of the new season's honeys.

  • Thomas' Oak Honey: This season’s Oak honey is exceptionally thick, boasting a moisture content of just 13.6%. Such low moisture results in an intense, concentrated flavour. You’ll experience deep, earthy notes that linger on the palate, making this honey truly special.
  • Thomas' Red Fir Honey: Lovers of this honey will know of the complex honey with a bouquet of woody aromatics intertwined with subtle hints of resin. The flavour is layered, offering a rich, fruity taste that’s perfect for those who appreciate the deeper notes of this honey that is created high on Mount Kaliakouda.
  • Thomas' Orange Blossom Honey: A bright and lively honey that bursts with citrus flavour. Sourced from the Laconian country in the Peloponnese, this honey captures the essence of the region’s finest oranges. You’ll find it light, with distinct floral notes and a zesty orange finish—a citrus lover’s dream.
  • Thomas' Vanilla Fir Honey: This is one of the rarest and most distinctive honeys in the world, it is harvested by Thomas' cousin from the black fir trees on Mount Mainalon in the Peloponnese region of Greece. It has an exceptionally low sugar content compared to other honeys. You will find a thick, creamy texture and subtle yet distinct vanilla and caramel undertones - complemented by mild woody and earthy notes with an almost buttery mouth feel.
  • Thomas' Wild Thyme Honey: For those who enjoy bold flavours, this honey offers a robust, slightly spicy character. Its unmistakable herbal aroma is a testament to the wild thyme from which it’s harvested on the mountains in Thessaly, delivering a taste experience that’s both powerful and aromatic.
