Antonio's Certified Organic raw eucalyptus honey is a really beautiful tasting honey; it has a wonderfully fruity creaminess along with a very mild eucalyptus/menthol aftertaste. Suitable for all ages as it is not overbearing in any way. This is a relatively light-tasting tree honey. It shares characteristics with other herbal honeys, such as thyme or sage.

Colour: This particular honey is a deep shade of orange amber when runny and when set it turns to a creamy tan.

Eucalyptus honey facts: Eucalyptus honey is a variety with a unique composition.  It contains traces of eucalyptol which gives it its fresh revitalizing taste. This essential oil is often used in aromatherapy as a decongestant and antiseptic.

Where does the honey come from: This variety of eucalyptus honey comes from Eucalyptus trees north of Madrid in the lowly populated area that lies between northern Spain and the centre (where Madrid is).

Who produces the honey? The bees of Antonio Simone, a 4thgeneration beekeeper who takes pride in producing honey in a traditional way without adding or taking away anything. Antonio's hives are based in the wildest places.

What about the tree that the honey comes from? This Eucalyptus honey comes from some hives that Antonio has at De Coimbra Portugal. The eucalyptus tree is an evergreen, also known as eucalipto in Spanish. It is one of the fastest growing trees in the world.  Eucalyptus originates in Australia but has been introduced to Europe.

How do people use eucalyptus honey? Eucalyptus honey is often used in skin care. It has a fresh clean aroma and its soothing composition helps aid skin recovery from blemishes, acne and spots. It is also extremely versatile in different recipes, such as: a glaze for meats, cakes, flapjacks, breads and teas.

Please know that raw honey does crystallise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.
