Sometimes a honey sample arrives to be tasted and tested by us and it is not just good, it is mind blowing - a true treat for the senses.
Such a honey arrived from a guy called Tavros, who lives a simple organic life close to Mount Arakynthos, in Greece.
Asterios, who is our direct link with the beekeepers in Greece arranged to get the sample sent to me. He kept banging on about this honey and telling me how good it was.
Eventually, after much chiding from Asterios, I did try it and I have to say it is one of the very best dark honeys that I have tasted out of hundreds over the last 10 years. Certainly the best this year.
It has all the qualities of a good forest honey, but there is more to it - like treacle and stewed fruit. But there is more. A subtlety of flavours coming through that gives it a long finish. You will understand why when you come to the section below on 'Where does it come from?' The flavour is bold but also complex and there are many layers to the flavour.
Tavros only sells one variety of honey - this Mountain Forest. From conversations with Tavros I could see that I was dealing with a very passionate guy. He is rightly proud of his honey, which always sells out, much of it goes to America, where Greek products are highly valued.
It was quite a task reaching an agreement on price and quantity as he has more demand than supply. But I think he was excited at the thought of his honey being sold in the UK. So I present to you Tavros' Mountain Forest.
What does it taste like: This honey is dark and flavoursome with hints of molasses and fruity undertones, with a medium sweetness. You can taste notes of mountain herbs, such as Oregano, as well as the Linden, tree which is unusual in this type of honey.
Where does it come from: The rare aromatic herbs, special flora biodiversity (Natura 2000) area and unique environmental conditions in the fertile mountain forests of Mount Arakynthos create this honey. It is an area which is rich in heather, chestnut, oak, linden tree, aromatic plants and herbs, in altitudes of 400 to 1100 meters. The bees collect the nectar and honeydew during May, June, July and August.
Who produces this honey? Asterios co-ordinates for us on the ground in Greece. He is lucky enough to have an amazing network of fellow artisan Greek beekeepers. He introduced me to Tavros whose bees have produced this wonderful honey.
Mountain honey facts: Bees kept at higher altitudes will have a much shorter period of time within which to gather honeydew and nectar and make honey before the seasons change. This makes high altitude honeys rarer due to their smaller supply. Mountain honeys also tend to have a slightly thicker consistency due to the bees having to fly further to get the honey back to the hive.
Crystallisation:- Please know that raw honey does crystallise and is a natural process of raw honey (therefore we cannot except returns on honey that may have crystallised). We indicate on the website the state of each honey - either runny or crystallised but be aware this is to the best of our knowledge and the state can change quickly. We only supply raw honey because we believe this is how all honey should be. If you don't want your honey to crystallise then raw honey probably isn't for you.
