Flavour
Antonio’s Organic Raw Lavender Honey has a beautifully balanced flavour that is both floral and subtly herbal. The initial taste is warm and creamy, with soft vanilla-like undertones, followed by gentle hints of pure lavender blossoms. Unlike some floral honeys that can be overpowering, this honey is delicately sweet with a mild, lingering aftertaste.
The smooth, buttery texture enhances its luxurious mouthfeel, making it a standout honey for gourmet applications. Its aromatic complexity shines in baking, adding depth to pastries, madeleines, and honey-glazed cakes. It also works as an exquisite drizzle over roasted vegetables, grilled meats, and artisanal cheeses, lending a touch of Mediterranean refinement.
Colour
This honey starts as a deep amber when runny and transforms into a rich, buttery yellow as it crystallises over time.
Origin
Antonio’s lavender honey is harvested from pristine, organic lavender fields in Brihuega, Guadalajara, Spain. The region is famous for its high-quality lavender, grown without pesticides or synthetic treatments, ensuring an exceptionally pure and fragrant honey. The combination of clean air, fertile soil, and sustainable beekeeping results in a honey that embodies the true essence of Mediterranean flora.
Producer Story
Antonio is a pioneer of organic beekeeping in Spain. His hives are mainly in Spain’s Sierra de Guadarrama north of Madrid, with some in Portugal to adapt to climate challenges. Working with his son Dani and son-in-law Ruben, he produces certified organic raw honeys (chestnut, oak, lavender, eucalyptus) and teaches beekeeping. He is sought worldwide for his ethical, organic practices.
Common Uses
- Gourmet baking – Elevates pastries, madeleines, and cakes with a floral sweetness.
- Glazes & marinades – Perfect for roasted meats, grilled chicken, and seafood.
- Cheese pairing – Pairs beautifully with creamy cheeses like brie and goat cheese.
- Salad dressings – Adds a touch of aromatic sweetness to vinaigrettes.
- Dessert finishing – A sophisticated drizzle over panna cotta, ice cream, or fresh fruit.
How to store your honey
To preserve its natural potency and qualities, store the honey in a cool, dark place. Light and heat degrade the enzymes that contribute to antibacterial activity. Keeping it away from light and high temperatures helps maintain its flavour, texture, and active properties.
Why Raw Honey is Different from Processed Honey
Raw honey means it comes from the hive to the jar with minimal interference. Most supermarket honey is processed to look attractive—drained of pollen, heated, and blended. Raw honey varies from batch to batch because it is not factory-processed, filtered, or heated to be uniform. It changes with the season, climate, and bee forage. We update this fact sheet based on the current batch.
Crystallisation
Please note that raw honey crystallises naturally (therefore we cannot accept returns on crystallised honey). We list each honey as runny or crystallised based on our best knowledge, though the state may change quickly. For details, check our Runny Honey Guide or the Wikipedia section on honey crystallisation.
