Rossend's Raw Calluna honey is a classic premium variety. This is a beautifully deep tasting shrub honey, it has a warm and rich flavour, balsamic, sweet and bitter, a unique variety that has to be experienced. The bees make it from a variety of heather, called Calluna vulgaris. It is normally made high in the mountains. Despite not being a tree, Calluna has the properties of a tree honey, namely its potent taste and dark colour.
Colour: This particular honey is dark brown in colour.
Where does the honey come from? This variety of heather honey comes from Catalonia in Spain. The Catalonia Pyrenees are known for their pristine forests, high peaks and heavenly meadows, rushing rivers, winding streams and thundering waterfalls.
Who produces the honey? This Calluna honey comes from Rossend. He treats honey like an art form and you can really tell, it has such a perfect consistency and his varieties range from very subtle to very overt.
What about the plant the honey comes from? Calluna Vulgaris (known as common heather, ling, or simply heather) is the sole species in the genus Calluna in the family Ericaceae. This shrub is a small mountain-hugging evergreen that produces many small pinkish-purple flowers and loves acidic soils. The flowers are also used in the preparation of some drinks like ales, wines, and tisanes.
Common Uses: Calluna honey is particularly good to use for the treatment of wounds, skin infections and fungal infections due to its high levels of natural hydrogen peroxide. As well, it's very versatile for use with foods such as Greek yoghurt, ice creams, and glazes for meats.
