Produced and harvested in the mountainous areas of the Thessaly region of Greece.
This selection is a wonderful mix of raw honeys from mountains and forests - all coarse filtered and unheated. This selection has been put together to give the best possible taste experience of Greek honey, which is very highly regarded and follows an ancient beekeeping tradition right back to ancient Greece.
The honeys are brought to us by Thomas, a young Greek beekeeper, and his family which includes his father Giorgos and sister Elena.
Thomas is planning to take over his father's hives, which are on the sides of mountains and in secluded forest glades. He has great enthusiasm for raw honey and natural hive products.
Raw Greek Mountain Oak Honey/*Active 21.5+ has a deliciously rich and mineral treacle flavour with hints of cooked apples and plums. The aftertaste lingers only briefly with a slight sourness. The aroma is similarly fruity, reminding us of cold spiced fruit sauces. The flavour and aroma make us think this could go very well with a fruitcake or Christmas pudding. This is a very thick honey.
*What does "Active mean?": We send some of our honeys to a lab for a "Total Activity test". This test measures the total antimicrobial activity of a honey. This is done by testing a solution of a honey on a lab plate against the Staph Aureus bacteria. The honey is graded according to the amount of bacteria that the honey solution kills. Generally the range that we see will be between 10 and 25 plus. This type of test is similar to the test used to grade Manuka Honey.
Raw Greek Pine Honey - Thomas' raw Greek pine honey is a unique type amongst the tree varieties, and is regarded as one of the best honey varieties available. It has a strong, sweetly pine aroma with waxy, spiced overtones, similar to cloves or other warm, winter spices. The flavour starts with a strong sweetness, which comes on very quickly with dark, dry fruit and prominent cooked fig flavour, finishing into a sweetness that lingers at the back of the throat.
Thomas' raw Greek fir honey starts with a mild nuttiness then explodes into a bold, juicy sweetness with hints of savoury herbs and a slight sourness in the aftertaste, similar to the sourness experienced at the end of blackstrap molasses. The taste lingers sweetly on the palate for a good time. It has grassy, herbaceous smell lingering within the honey sweetness mild and green somewhat similar to fennel or winter savoury.
