Who produces this honey? These Thyme and Mountain Forest wilderness honeys are produced by Giorgos Rizos and his wife. They are the master beekeepers behind a series of premium award winning honeys which keep winning top awards year after year. Giorgos has a knack for finding the best places in Greece for his bees to produce honeys, with outstanding complex flavours. Places like Mount Kissavos, where the climate and soil combine with his bees and his beekeeping craft to produce sublime honey. Giorgos is certified to the highest level.
Mountain honey facts: Bees kept at higher altitudes will have a much shorter period of time within which to gather nectar and make honey before the seasons change. This makes high altitude honeys rarer due to their smaller supply. Mountain honeys also tend to have a slightly thicker consistency due to a lower moisture content.

This honey is dark and sultry, with a thick and syrupy body & complex bittersweet aroma." More on honeydew honey: This is a dark thick runny honey – it is known as a honeydew, because it is from the sap and resin of the tree not from flower nectar. Honeydews are high in oligosaccharides, which are known for their prebiotic qualities- aiding digestion.
About the beekeeper: Vicky and Dimitris produce the Pine and Oak wilderness honey. They are certified organic traditional award-winning beekeepers. Their bees work the trees and plants in a Natura 2000 reserve in the area of Mount Holomontas in Chalkidiki, Greece. It is a forested reserve, a very pure and wild area, with soil and climate that enables the bees to produce very special honeys - with a depth and intensity of flavour that you only find in the very best honeys. Organic beekeepers Vicky & Dimitris believe that honey in the jar should be as it was in the hives.
