This gift selection contains a wonderful mix of raw honeys from wild forests and abandoned villages - all unfiltered and unheated. This selection has been put together to give the best possible taste experience of natural honeys from the remote rural areas of Bulgaria, which has a rich and ancient beekeeping tradition.
Raw Coriander Honey (500g) - Ivan's raw coriander honey is a sweet, herbaceous honey, with a medium-strength sweetness. The aroma is very mild, with sweet, slightly citrus notes, similar perhaps to lemon oil.
The flavour starts off with a strong floral and herbal flavour, lengthening into a sweetness that reminds of us very sweet, sun-ripened oranges. The herbaceous notes lend an interesting, contrasting sourness to balance the sweetness of the foretaste and main flavours. It finishes quite cleanly, with a hint of beeswax lingering momentarily.
Raw Beech & Oak Honey (500g) - Ivan's raw beech and oak honey is a rare type of honey.
This is a deep and rich tasting tree honey also known as honeydew honey. It has a beautiful, rich flavour like a nutty caramel. This comes from bees feeding on beech and oak trees in Bulgaria. Tree honey tends to be dark and have a deeper flavour in comparison to other varieties.
Raw Herb & Wildflower Honey (500g) - This is a very unique variety, a sweet light floral taste with hints of fresh herbs.
It has a clean taste of herbs and flowers. It comes from bees feeding on the herb gardens in the abandoned villages of Gorna Oryahovitsa in Bulgaria. These villages have turned into meadows and herb gardens over time where the bees love to forage.
The herbs and wildflowers the bees feed on to make this honey are: Chamomile, Spearmint, St John’s Wort, Lemon Balm (Melissa), Chicory, Nettle, Clover, Lucerne (Alfalfa), Yarrow, Thyme and Oregano.
Please know that raw honey does crystalise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.
