Artisan Raw Greek Arbutus & Honeydew Honey - 960g
Thomas' raw Greek arbutus & honeydew honey is an arbutus honey for those who don't like arbutus honey. This honey has been produced by the bees from arbutus nectar and a relatively large proportion of honeydew, which significantly reduces the natural bitterness of arbutus honey, which many find too strong for their palettes. The bitterness is instead reduced to a much more mild note in the aftertaste. Instead, the foretaste and main body are most like an oak honey - rich, fruity, and fairly mineral.
Colour: Very dark when runny, lightening significantly when crystalised
Where does the honey come from? This variety of honey comes from the Agrafa Mountains of central Greece, near to Lake Plastira. It has many streams and small lakes and a scattering of small villages. It's a beautiful place for a holiday and a great source of lovely raw honey!
Who produces this honey? This arbutus & honeydew variety comes from the family of Thomas, who is planning to take over the family's hives, located in secluded forest glades. Thomas, who works with his family to tend bees and produce raw honey in the mountains of southern central Greece, has great enthusiasm for raw honey and natural hive products.
What about the tree the honey comes from? The Arbutus unedo bush is an evergreen, also known as madrono in Spanish and is nicknamed 'strawberry tree' due to its fruit, which look a bit like strawberries. However, these berries are not overly sweet, leaning more to acidic, but they are apparently very refreshing. The fruit of this bush is sometimes used in traditional Chinese medicine.
Please know that raw honey does crystalise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.

A Rich Treat
This is a thick set, dark, honey with exceptional depth of flavour. It has surprising lemony flavours going on at the back of the tongue and, although robust, it isn't so strong tasting as to be unpalateable to young children, for instance. I can highly recommend it.

The Raw Honey Shop
Hi Lawrence, Sorry to hear you didn't receive your honey as you were expecting it. I’ve just checked your order confirmation and it looks like it was mentioned as crystallised. For your future purchases, please make sure to check the state that you’ll find under the title of each product page as well as in your order and shipping confirmation. If you don’t like it this way, you can always gently warm it up by placing it, wrapped in a towel, on a radiator overnight at low temperature, or in a recipient with warm water (not boiling) and it will eventually turn runny again. Hope this helps! Best wishes, The Raw Honey Shop team
