Thomas' Raw Organic Greek Fir Honey starts with a mild nuttiness then explodes into a bold, juicy sweetness with hints of savoury herbs and a slight sourness in the aftertaste, similar to the sourness experienced at the end of blackstrap molasses. The taste lingers sweetly on the palate for a good time.
It has grassy, herbaceous smell lingering within the honey sweetness-mild and green somewhat similar to fennel or winter savoury.
Where does it come from: This Fir tree honey is harvested from altitudes of at least 1500 metres on a mountain close to Argithea in Greece.
Colour: When runny, the colour of this honey is dark amber to nearly black, sometimes with a slight greenish tint.
More on honeydew honey: This is a dark thick runny honey-it is known as a honeydew, because it is from the sap and resin of the tree not from flower nectar. Honeydews are high in oligosaccharides, which are known for their prebiotic qualities- aiding digestion.
How Raw Honey is different from Processed Honey - Raw honey generally means the honey has not been processed, it has come from the hive to the jar with minimal interference. Most supermarket honey is highly processed to make it look more attractive, usually it has been largely drained of pollen, heated and blended. Raw honey tends to vary from batch to batch, this is because it is not processed in a factory, filtered or heated to look homogeneous. Raw honey changes with the season and climate, the soil, what the bees feed on, and the nature of the colonies.
About the beekeeper: It was brought to us by Thomas, a young Greek beekeeper, who is planning to take over his family's hives, which are in secluded forest glades in and around mountains of central Greece. He has great enthusiasm for raw honey and natural hive products.

My favourite fir tree honey
This raw honey is so good for the body in many ways... Every morning I have warm water one lemon squeezed, and one garlic piece crushed into a big bone china cup, and a big dollop of Tim's raw honey.....! Once you've had this honey you can never go back to the rubbish in the supermarket!! Thanks Tim for all your hard work!!!
First honey order from the Raw Honey Shop.
It was my first time ordering from the Raw Honey Shop and it certainly will not be the last. They are simply delicious and truly taste of honey. My second and third orders were for my niece and her family who were sick at home. Her husband is of Greek origin and certainly appreciated the Greek Mountain oak honey and the Mount Athos Chestnut honey. They each have a teaspoonful every morning in their tea and on toast. I will be reordering again in the new year once we have finished the two 1kg jars I had initially ordered for my husband and myself.
Great tasting honey
Stays runny and has a great taste . We have honey on our porridge every morning ! Always purchase my honey from you as great varieties to try but think I like the Greek fir the best !
