Thomas's raw Greek forest blossom honey is a mild honey, perfect for raw honey newcomers or anyone looking for a sweet honey without too much complexity. It has flavours of ripe melon and banana with overtones of vanilla and maple. The aroma is very mild as well, thanks to the wide mix of blossom nectars, particularly ivy.
Colour: This is a lighter-coloured forest honey, normally a light amber when runny, turning a fudge colour when crystalised.
Where does the honey come from?: This variety comes from a forested mountain wilderness in the area around Tsagaraza Pelion in Greece. There are many forest and mountain flowers (as well as honeydew) in this one including: wild lavender, wild clover, oregano, ivy, valerian, pine, oak, magnolia, and beech.
Who produces this honey? This forest blossom variety comes from the family of Thomas, who is planning to take over the family's hives, located in secluded forest glades. Thomas, who works with his family to tend bees and produce raw honey in the mountains of southern central Greece, has great enthusiasm for raw honey and natural hive products.
What about the plants the honey comes from? This honey comes from a wide variety of tree blossoms and forest flowers.
