This raw Greek Sidr honey comes courtesy of Asterios, who works with a big network of artisan beekeepers. He has taken up our challenge of finding Sidr honey, following a bad year for this variety. Recently he has found some more Sidr, through a colleague Charalampos, a dedicated artisan beekeeper who turned out to have a wonderful harvest of Sidr honey. One of the purest ones we've had, which lab tests showed had 78% Sidr!
Charalampos' Sidr honey is one of the best ones we have tasted this year. We had many offers, but we would only chose the best one for you. And this one passed with flying colours!
Charalampos' Raw Greek Sidr honey, is a thick honey with a rich, lavish and herbal sweet taste. It is very pleasant with a slightly sour and tangy aftertaste. It is not like dark tree honeys such as Oak or Chestnut.
The bees feed on the lavish nectar that this tree produces for a short period in the late Spring producing this legendary honey.
Colour: It has a strong burnt orange colour when runny, turning a creamy, buttery yellow when crystallised.
Where it comes from: This Sidr comes from the area of Mount Paiko close to the Greek border with Turkey. This is a wild and remote area with a small population.
More on this honey: Sidr Honey is among the finest variants of honey in the world. It comes with a distinctive taste. This honey is mentioned in the Qur'an.
About the beekeeper: It was brought to us by Asterios and his friend Charalampos, who lives in a very wild area of Greece. His hives are situated deep in the forest, miles from places where pesticides, herbicides and fungicidesare used.
The free jar of Raw Multifloral honey comes from beekeeper Rossend. The honey has a scent that reminds us of fresh honeycomb straight from the hive. The flavour of this particular multifloral starts out herbaceous and earthy followed by an almost sour, slightly sweet main flavour. This is most likely due to the wide variety of wild herbs in the meadows and grasslands where the hives are located. It then finishes with slightly woody notes that don't linger too long in the mouth.
Please know that raw honey does crystallise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.
