Thick Robust Tree honey Flavour with Subtle Notes Of Wild Mint & Clover
When I visited Thomas he told me about his neighbour who is a potter. Together they created a design, which we liked, and then this was fired up to create a traditional Greek honey pot. To this Thomas has added about 500g of his 2019 Mountain honey. We are also adding a free honey dipper. This would make a delightful present, which we can be refilled again and again with some delicious honey.
Thomas' Raw Greek Mountain honey (2019) is an exceptionally good one - due to the ideal weather for the bees in Greece in 2019. Thomas only had 216 kilos of this honey available and I bought it all, having tasted it when visiting him in September.
I was lucky enough to visit the amazing place on the Mountain where Thomas' family bees made this honey. The bees collected this honey mainly from Chestnut, Fir, Oak, Wild Mint and Wild Clover. This gives it a unique flavour, robust because of the stronger tasting Chestnut, Oak and Fir but also with subtle notes due to the Wild Mint and Wild Clover.
All the family's honey is produced to organic standards - they are currently going through organic certification.
Colour: When runny, the colour of this honey is a rich reddish brown, a bit like Italian Chestnut
Where it comes from: This Mountain honey comes from near Itamos, Greece at around 1,000 metres. The mountains are covered in a mix of Chestnut, Fir and Oak - with glades where the Wild Mint and Wild Clover grows.
About the beekeeper: It was brought to us by Thomas, a young Greek beekeeper, who is planning to take over his family's hives, which are in secluded forest glades in and around mountains of central Greece. He and his sister Elena are working to build the business, along with Giorgios (dad), Panos (cousin) and Costas (uncle). Thomas has great enthusiasm for raw honey and natural hive products.
Please know that raw honey does crystalise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.
