Thomas' Raw Greek Mountain Oak honey Tested +19 Activity Rating (like a good Manuka) has a deliciously rich and mineral treacle flavour with hints of cooked apples and plums. The aftertaste lingers only briefly with a slight sourness. The aroma is similarly fruity, reminding us of cold spiced fruit sauces. The flavour and aroma make us think this could go very well with a fruitcake or Christmas pudding.

Colour: It's very dark, nearly black, with a slight hint of purple. A very thick honey that sits solidly on the tongue, taking a moment to melt away.
Where does the honey come? The honey comes from an Oak forest that sounds a lake in the mountains close to a place called Rentina.
About the beekeeper: It was brought to us by Thomas, a young Greek beekeeper, who works with his father Giorgios. In time he hopes to take over his father's hives, which are in secluded forest glades. He has great enthusiasm for raw honey and natural hive products.
Plamen's Raw Organic Oak Honey has an immediate and strong, dark aroma, which really suits this rich and flavourful honey. Strong mineral flavours remind us of blackstrap molasses. The dark sweetness of dried fruits such as prunes and dates comes through, finishing fairly quickly with a very faint lingering of clove or cinnamon.
Colour: When runny, this is a very dark honey, almost black in colour with very little light passing through, but it looks quite coppery when the light is strong enough. When crystalised, the honey will lighten significantly as is expected.
Where does the honey come from? This honey comes from the Bulgarian strandzha oak, which is a particular oak species native to this region.
The Oaks grow in the Great Bulgarian Forest, a remnant of a very ancient tract of forest that used to cover most of Europe.
About the beekeeper This honey comes from Plamen. He is a traditional, organic-certified beekeeper, following on from generations of family beekeepers before him. He lives with his wife and son in a little stone and wood house, sat in a meadow, faced by beehives.
Antonio's Raw Organic Oak is a very deep and rich tasting tree honey; it has a fruitiness as well as a deep woody flavour. Tree honey tends to be dark, have a stronger flavour and are less likely to set due to a relatively low glucose content.
More on the flavour: Antonio's Raw Oak Honey is a unique type amongst the tree varieties. It has a deep earthy taste with lots of malt and a touch of smokiness - quite savoury and not as sweet as other varieties.

Colour: This particular oak honey is very dark in colour, almost black. In some cultures, dark honey is very highly valued.
Where does the honey come from? This variety of oak honey comes from a forest that nestles next to a lake in the Sierra del Rincon UNESCO Biosphere Reserve, where no chemical treatments are allowed. The trees grow at around 1100 metres in an extremely wild and untouched place.
About the beekeeper Antonio Simon is a 4th generation beekeeper who takes pride in producing honey in a traditional way without adding or taking away anything. Antonio's hives are based in the mountain ranges north of Madrid, his beekeeping practices and the land he has his hives on have been certified as organic by the Committee of Organic Agriculture in Madrid.
Ramon's Raw Oak Honey has a caramel taste with a touch of fruitiness as well as the subtle malt flavour that is more common with tree honey.
More on the flavour: This is a rich and fruity tasting tree honey. It has a rich and sweet malty flavour along with slightly earthy notes. Tree honey tends to be dark and is less likely to set due to a relatively low glucose content.
Colour: This particular honey is brown in colour, slightly red in the light like dark amber.
Where does the honey come from?: This variety of oak honey comes from Aragon in Spain, a largely untouched, wild and diverse landscape. The Mediterranean Oak, where Ramon's bees feed, grows in a wilderness area that stretches for many miles where there is no human habitation.
About the beekeeper This oak variety comes from Uncle Ramon, a friendly hip beekeeper with a passion for traditional methods of honey production. Ramon produces a wide variety of different honey, all completely raw with nothing added or taken away.
Common Uses: Oak honey is good to use in recipes such as cakes, cookies, desert toppings, ice creams, warm honey teas, salads and meat glazes. This is because of its warm, balsamic flavour.

Antonio's Raw Organic Wild Lavender Honey. This is a light and pleasing herb flower honey, it has floral notes and a creaminess like vanilla - but doesn't have quite as strong a flavour as honey from cultivated lavender.
This honey comes from bees feeding on the wild lavender bushes in Spain. It is different from the tree sap honey which is often dark in appearance and strong in taste, this honey tends to be very mild, light and softer in taste.
Where does the honey come from? This variety of wild lavender honey comes from the northern mountain ranges of Madrid in Spain known as Sierra De Guadarrama.
Who produces the honey? The bees of Antonio Simone, a 4thgeneration beekeeper who takes pride in producing honey in a traditional way without adding or taking away anything. Antonio's hives are mainly based in the mountain ranges of north of Madrid. His beekeeping practices and the land he has his hives on have been certified as organic by the Committee of Organic Agriculture in Madrid

When your item has been shipped from our warehouse, you will be sent a tracking number via email with which you can track your parcel’s progress. Shipping to UK addresses
For deliveries to the UK, we use 24 hour and 48 hour tracked signed services for most orders.Most shipments will require a signature on delivery.
Orders placed on a working day (weekdays, excluding bank holidays) before 1pm will normally be packed and handed to the shipping company same day. Orders placed after 1pm on a working day or during non-working days will normally be packed and handed to the shipping company the following working day.
Shipping to non-UK addresses
For deliveries outside the UK, we use carrier services (the exact service will depend on your country). Delivery times will vary depending on the destination country. Most shipments require a signature on delivery.
Due to additional paperwork needed for international shipping, orders with non-UK addresses will take slightly longer to process. Orders placed on a working day (weekdays, excluding bank holidays) before 1pm will normally be packed and handed to the shipping company within two working days.
