Raw Organic Acacia Honeycomb - 250g
Plamen's raw acacia honeycomb contains a very mild and pleasant acacia honey, with a soft and light taste of creamy vanilla and a hint of floral blossoms. Honeycomb is the best way to eat honey because honeycomb often includes bee bread (fermented pollen mixed with honey and enzymes), royal jelly and propolis in the cells - some of the most nutritious products of the hive.
More on the flavour: This is a mild tasting tree blossom honey. It has one of the lightest tastes in the world of honey, it is a little like a soft vanilla and cream. This comes from bees feeding on the Acacia blossoms on the Bulgarian Acacia trees. It has a very low glucose content so tends to always be in a runny state, the tree has been well known throughout history as a source of medicine by the African tribes, Greeks, Romans and European settlers.
Colour: This particular honeycomb is a very light golden colour, very nearly clear.
Where does the honeycomb come from? This honeycomb comes from the forests around the village of Panchevo, located in the Sredets Municipality. It is a tucked-away, rural area in southeastern Bulgaria, quite near the border with Turkey and not far from the Black Sea. It enjoys lovely warm weather in the summers and is covered in forested hills.
Who produces this honeycomb? This acacia honeycomb comes from Plamen. He is a natural, traditional, organic-certified beekeeper, following on from generations of family beekeepers before him. He lives with his wife and son in a little stone and wood house, sat in a meadow, faced by beehives.
What about the tree the honey comes from?: The Acacia tree is actually a flowering plant which is part of the legume family. It is also known as the black locust tree due the black legumes which grow on the tree and give the appearance of locusts. There are an incredible amount of species, all produce a light beautiful smelling nectar that the bees love.
Common Uses: Acacia honey is particularly good to use on irritated skin, it has a soothing effect and can help repair wounds, infections and damage. It is also very versatile in recipes such as: cakes, cookies, desert toppings, ice creams, warm honey teas, salads and meat glazes, this is because its light flavour does not tend to alter a dish's taste.
Acacia Honey Facts: Acacia honey has a relatively low glycaemic index, therefore it is more suited for those who can be sensitive to sugar for different reasons. This also means the honey stays in a pristine-looking, runny state for a very long time, like a clear liquid gold.
Please know that raw honey does crystalise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.
