More on the flavour: This is a very pleasant and light flavoured tree blossom honey. It has a delicate peachy taste with hints of apple and pear. It comes from bees feeding on the small blossoms on the Mediterranean apple trees.

Colour: This particular honey is a light shade of amber turning more pale upon setting.

Where does this honey come from? This variety of apple honey comes from Catalonia in Spain, the Catalonia Pyrenees are known for their pristine forests, high peaks and heavenly meadows, rushing rivers, winding streams and thundering waterfalls.

Who produces this honey? This apple honey comes from Rossend. He treats honey like and art form and you can really tell, it has such a perfect consistency and the varieties range from very subtle to very overt. What about the tree the honey comes from? The apple tree also known as pomera in Catalonia, is a deciduous tree and part of the rose family, one of the most widely cultivated fruits in the world, in 2013 80 million tonnes of apples were grown!

Common Uses: Apple honey is particularly good to use in different recipes, such as: salads, an accompaniment with cheeses, adding to meat as a glaze and beautiful in a light herbal tea.

Apple Honey Facts: Apple tree honey is a little hard to find, despite there being an abundance of apple trees around the Mediterranean. It is not produced on its own as much as other types, as bees may feed on many other trees and flowers nearby making it a polyfloral honey rather than monofloral one.

Please know that raw honey does crystalise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.
