Tio Ramon (Uncle Ramon)
Raw Calluna (Ling Heather) Honey - 4kg
Awarded a coveted Two-Star Prize in the Great Taste Awards 2018
According to the judges: "Deep and luxurious aroma reminiscent of burnt caramel and sticky dates. Thick and satisfying mouthfeel with lingering floral notes and wintergreen aftertaste. Very unctuous and long lasting, delicious from start to finish." and "The heather profile is mature and complex with a tang to it that is interesting and different", with "clear regional input from the vegetation and an authentic traditional honey flavour."
Raw, unpasteurised & incredibly tasty.
Calluna honey is a dark amber colour going lighter when set.
An amazing tasting shrub honey, it has a very potent flavour.
Produced in the untouched landscape of Aragon near Valencia in southern Spain.
More on the flavour: This is an amazing tasting shrub honey, it has a very potent flavour. Elements of bitter and sweet with a depth of earthiness. Amongst the many calluna honeys we have had, we find this one to be particularly potent. Despite not being a tree, heather honey has similar properties to tree honeys, namely their potent taste and dark colour.
Colour: This honey is a dark amber colour.
What about the plant the honey comes from? The ling heather shrub is a small mountain-hugging evergreen, which produces many flowers and loves acidic soils.
Common Uses: Calluna honey is particularly good to use for the treatment of wounds, skin infections and fungal infections due to its high levels of natural hydrogen peroxide. As well, it's very versatile for use with foods such as Greek yoghurt, ice creams, and glazes for meats.
Who produces this honey?: This variety comes from Ramon, a hip beekeeper with a passion for traditional methods of honey production. Ramon produces a wide variety of different honeys, all completely raw with nothing added or taken away.
