The 3-star award is valid for 3 years. 2019 has been the first year, since 2016 that Ramon's bees have been able to produce any of this honey. The Summers of 2017 and 2018 were too dry.
Ramon's raw carob honey is a beautiful, deep-tasting tree honey, with a warm chocolatey flavour and a hint of smoky wood. It tends to be a more complex and deeper tasting honey. It comes from bees feeding on carob trees in the Mediterranean, different from the blossom honeys as it has a more prominent taste. It does crystalise more quickly than some other tree honeys, and it has a lighter colour.
Colour: This particular honey is a medium brown amber shade when runny and turns to a creamy light brown when set.
Where does the honey come from? This variety of carob honey comes from the south of Aragon in Spain, a largely untouched, wild and diverse landscape.
What about the plant the honey comes from? The carob tree, also known as algarroba in Spanish is a flowering evergreen tree. It is actually a member of the pea family and produces beautiful tasting legumes which are often used as a low fat chocolate substitute. The trees are male and female and occasionally hermaphroditic Only the female trees produce the legumes. The trees flower in the late summer, early autumn. It is one of the last honeys of the year.
Who produces the honey? This carob honey comes from Uncle Ramon, a friendly, hip beekeeper with a passion for traditional methods of honey production. Ramon produces a wide variety of different honey, all completely raw with nothing added or taken away.
Common Uses: Carob honey is particularly good to use in recipes such as: glazes for meats, cakes, flapjacks, breads and teas.
Carob Honey Facts: Carob honey is a unique variety which is quite rare and difficult to find. It has beautiful dark amber colour and delicious chocolatey overtones.

I had to try this as it is an award winner and boy! Can I see why! The first taste was a matter of “what’s happening here?” Then the next was “wow. That’s something. It’s like I’ve grown a second palate.” Now, I’m just hooked.
Delicious caramel/fudge quality but with good freshness. Not cheap but approaching very good value!

For deliveries to the UK, we use 24 hour and 48 hour tracked signed services for most orders.Most shipments will require a signature on delivery.
Orders placed on a working day (weekdays, excluding bank holidays) before 1pm will normally be packed and handed to the shipping company same day. Orders placed after 1pm on a working day or during non-working days will normally be packed and handed to the shipping company the following working day.
Shipping to non-UK addresses
For deliveries outside the UK, we use carrier services (the exact service will depend on your country). Delivery times will vary depending on the destination country. Most shipments require a signature on delivery.
Due to additional paperwork needed for international shipping, orders with non-UK addresses will take slightly longer to process. Orders placed on a working day (weekdays, excluding bank holidays) before 1pm will normally be packed and handed to the shipping company within two working days. Orders placed after 1pm will normally be packed and handed to the shipping company within three working days.
