Ivan's raw coriander honey is a sweet, herbaceous honey, with a medium-strength sweetness. The aroma is very mild, with sweet, slightly citrus notes, similar perhaps to lemon oil.
More on the flavour: This honey starts off with a strong floral and herbal flavour, lengthening into a sweetness that reminds of us very sweet, sun-ripened oranges. The herbaceous notes lend an intersting, contrasting sourness to balance the sweetness of the foretaste and main flavours. It finishes quite cleanly, with a hint of beeswax lingering momentarily.
Where does the honey come from? This variety of coriander honey comes from Gorna Oryahovitsa in Bulgaria. It is situated at the northern foothill of the Tarnovo Elevations, a beautiful landscape with a rich and ancient history. Abandoned villages dot the landscape which nature has reclaimed, these villages now host plains of herbs and wildflowers which the bees love to forage on.
Who produces this honey? This variety comes from Ivan - a young and fastidious beekeeper who is very concerned with details and getting it just right. He has a systematic approach and colour codes his hives, this stops the bees getting confused and heading to the wrong hive where a fight may ensue! Ivan is going through the organic certification process.
What about the plant the honey comes from? The bees gather nectar from the many overgrown herb gardens dotted around the landscapes where villages used to be. Coriander grows wild across central and eastern Europe.
Recommended uses: Coriander honey is particularly good to use in herbal teas, it lends a beautiful light flavour which complements the tea. It is also very versatile in recipes such as cakes, cookies, desert toppings, ice creams, warm honey teas, and salads because its tart flavour adds a real zing to dishes.
Coriander Honey Facts: Coriander honey is reputed to have benefits for digestion and gut health due to the effects of the small amount of coriander oil the bees carry back with them while they forage. These types of honey tend to set quickly, have large crystals and have a light floral taste.

Shipping to UK addresses
For deliveries to the UK, we use 24 hour and 48 hour tracked signed services for most orders.Most shipments will require a signature on delivery.
Orders placed on a working day (weekdays, excluding bank holidays) before 1pm will normally be packed and handed to the shipping company same day. Orders placed after 1pm on a working day or during non-working days will normally be packed and handed to the shipping company the following working day.
Shipping to non-UK addresses
For deliveries outside the UK, we use carrier services (the exact service will depend on your country). Delivery times will vary depending on the destination country. Most shipments require a signature on delivery.
Due to additional paperwork needed for international shipping, orders with non-UK addresses will take slightly longer to process. Orders placed on a working day (weekdays, excluding bank holidays) before 1pm will normally be packed and handed to the shipping company within two working days.
