Ramon’s raw forest honey is a luxurious, dark and rich honey. It has a caramel flavour and is sweet yet savoury, some compare it to molasses. This is one of our most popular types of honey with a unique nutty flavour.
More on the flavour: This is a deep and rich tasting tree honey, it has a caramel and nutty flavour. It comes from bees feeding on the tree sap and blossoms in the Mediterranean area. Tree honey tends to be dark, have a deeper flavour and is less likely to set due to a low glucose content. Tree honey tends to be more suited to adults as children tend not to like the stronger tasting varieties.
Colour: This particular honey is a dark brown colour.
What about the trees the honey comes from? The collective forest trees are also known as bosque in Spanish. These are usually chestnut and Mediterranean oak in the Catalonia area, but can be other types like beech and pine too. These large trees exude a sweet sap which the bees feed on, sometimes with the help of aphids who drill into the tree bark allowing the sap to flow out more freely.
Common Uses: Forest honey is particularly good to use in different recipes, such as: cakes, cookies, desert toppings, ice creams, warm honey teas, salads and meat glazes, this is because of its rich nutty and caramel flavour it can lend.
Forest Honey Facts: Forest honey is higher in fructose than other types, this serves as good source of energy. Hence, a spoon of chestnut honey helps to relieve fatigue immediately.
The flavour is just gorgeous and the texture, being runnyish but with a bit of crystal is just right. And it's not too sweet (I know that sounds odd, but the complexity of flavour makes it feel like it's good for me, whereas some honeys just taste of 'sweet' and are too ultra-smooth/refined) No name given.
Please know that raw honey does crystalize. This is a natural process that occurs due to high levels of natural glucose separating from naturally occurring water. For more information on why honey sets
