Rossend's raw forest honey is a luxurious, dark and rich honey. It has a caramel flavour and is sweet yet savoury, some comparing it to molasses. This is one of our most popular types of honey with a unique nutty flavour. Tree honey tends to be dark, have a deeper flavour and is less likely to set due to a relatively low glucose content.

Where does the honey come from? It comes from bees feeding on the tree sap and blossoms in the Mediterranean area. This variety of forest honey comes from Catalonia in Spain. The Catalonia Pyrenees are known for their pristine forests, high peaks and heavenly meadows, rushing rivers, winding streams and thundering waterfalls.
Who produces this honey? This forest honey comes from Rossend. He treats honey like an art form and you can really tell, it has such a perfect consistency and the varieties range from very subtle to very overt. He has won many awards for his honey including from the well renowned iTQi (International Taste and Quality Institute) who rated several of his honey varieties in the superior taste award category.
What about the trees the honey comes from? The collective forest trees are also known as bosque in Spanish. These are usually chestnut and Mediterranean oak in the Catalonia area, but can be other types like beech and pine too. These large trees exude a sweet sap which the bees feed on, sometimes with the help of aphids who drill into the tree bark allowing the sap to flow out more freely.
Common Uses: Forest honey is particularly good to use in recipes for cakes, cookies, desert toppings, ice creams, warm honey teas, and meat glazes. This is because of the rich nutty and caramel flavour it can lend.
Forest Honey Facts: Forest honey is higher in fructose than other types, this serves as good source of energy. Hence, a spoon of chestnut honey helps to relieve fatigue immediately.

When your item has been shipped from our warehouse, you will be sent a tracking number via email with which you can track your parcel’s progress. If you do not receive tracking information within five days of placing your order or have any problems using your tracking number, please let us know, and we can assist.
Shipping to UK addresses
For deliveries to the UK, we use 24 hour and 48 hour tracked signed services for most orders.Most shipments will require a signature on delivery.
Orders placed on a working day (weekdays, excluding bank holidays) before 1pm will normally be packed and handed to the shipping company same day. Orders placed after 1pm on a working day or during non-working days will normally be packed and handed to the shipping company the following working day.
Shipping to non-UK addresses
For deliveries outside the UK, we use carrier services (the exact service will depend on your country). Delivery times will vary depending on the destination country. Most shipments require a signature on delivery.
Due to additional paperwork needed for international shipping, orders with non-UK addresses will take slightly longer to process. Orders placed on a working day (weekdays, excluding bank holidays) before 1pm will normally be packed and handed to the shipping company within two working days. Orders placed after 1pm will normally be packed and handed to the shipping company within three working days.
