More on the flavour: This is a deep and rich tasting tree honey, it has a caramel and nutty flavour. It comes from bees feeding on the tree sap and blossoms in the Mediterranean area. Tree honey tends to be dark, have a deeper flavour and is less likely to set due to a low glucose content. Tree honey tends to be more suited to adults as children tend not to like the stronger tasting varieties.

Where does the honey come from? This variety of forest honey comes from Catalonia in Spain. The Catalonia Pyrenees are known for their pristine forests, high peaks and heavenly meadows, rushing rivers, winding streams and thundering waterfalls.

What about the trees the honey comes from? The collective forest trees are also known as bosque in Spanish. These are usually chestnut and Mediterranean oak in the Catalonia area, but can be other types like beech and pine too. These large trees exude a sweet sap which the bees feed on, sometimes with the help of aphids who drill into the tree bark allowing the sap to flow out more freely.
