This Raw Greek Oak and Chestnut Honeycomb is perfect for those who love dark, strong honeys. Honeycomb is the best way to eat honey because honeycomb is the honey exactly as it was in the hive. It contains all the good nutritious bits - such as bee bread (fermented pollen mixed with honey and enzymes), royal jelly and propolis in the cells.
More on the flavour: This is a beautiful combination of the flavours of Oak and Chestnut honey. It starts with a dark, black tea tannin-like foretaste, easing into a very sweet and delicious main taste. It has a certain bitterness along with caramel notes coming in around an essence of deep, black raisins and prunes, leaving a slightly ferrous tingle on the tongue.
Oak honey is a very deep and rich tasting tree honey; it has a fruitiness as well as a deep woody flavour. Tree honey tends to be dark, have a stronger flavour and are less likely to set due to a relatively low glucose content.
Chestnut honey is a beautiful, deep-flavoured variety. It has slight caramel notes as well as a deep sweetness and a touch of bitterness too. The nutty flavour of the chestnut carries through as well as a taste a little similar to maple syrup but slightly more rich and malty. Chestnut can lend a bitter taste to honey but not always, it is known to be one of the most varied types of honey in taste, differing greatly from one area to another and from one season to the next.
The two together, Oak and Chestnut, work beautifully.
You will find it a little chewy to eat - but you can swallow the wax, it is perfectly safe.

Where does the honeycomb come from? This honeycomb comes from a National Park in Greece, a truly wild and uncontaminated place. The location is near the village of Byronia, Serres, a small village at the foot of Mount Kerkini, close by a lake and above the river Strymon. It is within the Kerkini National Park that includes Lake Kerkini and the river Strymon, and runs from the lake to the Greek-Bulgarian border. The national park is one of the most important wetlands in Europe in terms of biodiversity and it is part of a big European network of nature protection areas. Because of the diverse ecosystem and the minimal human intervention, this is a true wilderness area for the bees to collect pollen and make splendid honey.
