Description

This Raw Artisan Oregano honey is a sweet, herbaceous honey, with a medium-strength sweetness.  The aroma is very mild, with sweet, slightly citrus notes, similar perhaps to lemon oil, complemented by a delicate citrus zing.

More on the flavour: This honey starts off with a strong floral and herbal flavour, lengthening into a sweetness that reminds us of very sweet, sun-ripened oranges. The herbaceous notes lend an interesting, contrasting sourness to balance the sweetness of the foretaste and main flavours.  It finishes quite cleanly, with a hint of beeswax lingering momentarily.

Where does the honey come from? This honey comes from Oregano growing on a mountain in a National Park in Greece, a truly wild and uncontaminated place. The location is near the village of Byronia, Serres, a small village at the foot of Mount Kerkini, close by a lake and above the river Strymon. It is within the Kerkini National Park that includes Lake Kerkini and the river Strymon, and runs from the lake to the Greek-Bulgarian border. The national park is one of the most important wetlands in Europe in terms of biodiversity and it is part of a big European network of nature protection areas. Because of the diverse ecosystem and the minimal human intervention, this is a true wilderness area for the bees to collect pollen and make splendid honey.

Who produces this honey? Asterios is one of the most genuine people you could ever meet. His aim is always to present to us the highest quality honey possible. He is lucky enough to have an amazing network of fellow artisan Greek beekeepers. This honey is bought to you by one such beekeeper, called Vangelis. For Asterios and Vangelis beekeeping is an art and they are excited that their honey will be appreciated in the UK.

What about the plant the honey comes from? Oregano is a species of flowering plant in the mint family Lamiaceae. It was native to the Mediterranean region, but widely naturalised elsewhere in the temperate Northern Hemisphere.

Please know that raw honey does crystallise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.
