Tio Ramon (Uncle Ramon)
Raw Heather Honey - 500g
Raw, Unpasteurised & Incredibly Tasty.
Deep brown in colour going slightly red in the light.
Superb deep flavour with a balsamic bitter sweetness.
Produced in the untouched landscape of Aragon near Valencia in southern Spain.
Ramon's raw heather honey is a classic variety, very popular due to its superb deep flavour, rich but not sickly, balsamic but not savoury. Heather honey is slightly bitter but complimented by a balanced sweetness, hard to describe as nothing quite compares to this, just simply stunning!
* If you have not had heather honey previously, we would recommend trying a tester before purchasing a full-size jar as the flavour can be quite intense. *
More on the flavour: This is a deep and flavoursome shrub honey, one of the most potent tasting varieties, it is balsamic, bitter, sweet and very unique. It comes from bees feeding on from low lying heather shrubs often on mountainous terrain. Despite not being a tree, heather honey has properties of a tree honey, namely its potent taste and dark colour.
Colour: This honey is brown in colour, slightly red in the light.
Where does the honey come from? This variety of heather honey comes from northern Aragon in Spain, a largely untouched, wild and diverse landscape close to the French border at the north and borders with Valencia to the south.
Who produces this honey? This oak variety comes from Uncle Ramon, a friendly hip beekeeper with a passion for traditional methods of honey production. Ramon produces a wide variety of different honey, all completely raw with nothing added or taken away.
What about the plant the honey comes from? The heather shrub also known as brezo in Spanish is a small mountain hugging evergreen which produces many flowers and loves acidic soils.
Common Uses: Heather honey is particularly good to use in different recipes, such as: Greek yoghurt, ice creams, glazes for meats and to add a unique zing to a dish.
Heather Honey Facts: This particular type of heather honey comes from the plants erica vagans and erica cinerea. Heather has 2 main genus, calluna also known as ling and erica or ericaceae, both are noted for being some of the best honey varieties you can obtain.

Please know that raw honey does crystalize. This is a natural process that occurs due to high levels of natural glucose separating from naturally occurring water. For more information on why honey sets
