Antonio's Organic Oak Honey Active 20 (500g) - This is a very deep and rich tasting tree honey; it has a fruitiness as well as a deep woody flavour. Tree honey tends to be dark, have a stronger flavour and are less likely to set due to a relatively low glucose content. Antonio's raw oak honey is a unique type amongst the tree varieties. It has a deep earthy taste with lots of malt and a touch of smokiness - quite savoury and not as sweet as other varieties. This particular oak honey is very dark in colour, almost black. In some cultures, dark honey is very highly valued. 

What does "Active" mean in the product title?:  We send some of our honeys to a lab for a "Total Activity test". This test measures the total antimicrobial activity of a honey. This is done by testing a solution of a honey on a lab plate against the Staph Aureus bacteria. The honey is graded according to the amount of bacteria that the honey solution kills. Generally the range that we see will be between 10 and 25 plus. This type of test is similar to the test used to grade Manuka Honey. 

Antonio's Raw Organic Chestnut Honey (500g) -  This is a deep and malty-tasting tree honey. It has a beautiful, rich and nutty flavour, which many people adore. It comes from bees feeding on the nectar and sap of sweet chestnut trees. It is quite different from blossom varieties like Lavender, which are light and subtle - this is dark and more potent. 

You will find slight caramel notes as well as a deep sweetness and a touch of bitterness too. The nutty flavour of the chestnut carries through as well as a taste a little similar to maple syrup but slightly more rich and malty. Chestnut can lend a bitter taste to honey but not always, it is known to be one of the most varied types of honey in taste, differing greatly from region to region and from one season to the next.

Antonio's Organic Thyme Honey (500g) - has a soft creamy taste with a gentle herbal hint of thyme, subtle and slightly savoury, ideal for all the family due to its balanced and pleasing flavour. This is generally a very mild honey even though its darker colour would lead many to expect a stronger flavour. This variety naturally contains a small amount of thymol from the thyme plant, which acts as an antibacterial agent.

Crystallisation:-  Please know that raw honey does crystallise and is a natural process of raw honey (therefore we cannot except returns on honey that may have crystallised). We indicate on the website the state of each honey - either runny or crystallised but be aware this is to the best of our knowledge and the state can change quickly.   If you want your honey runny and it has crystallised it's very easy to return it to runny go to this link Runny Honey  or see this section under our FAQ's Why Is My Honey Crystallised?

We only supply raw honey because we believe this is how all honey should be.  If you don't want your honey to crystallise then raw honey probably isn't for you.
