Raw Lime (Linden) Tree Honey - 940g
Ivan's raw lime (linden) honey is a very fruity-tasting variety with a clear taste of citrus. It is usually rare to get such a strong flavour in blossom honey as the flowers have a much lighter tasting nectar. It has a slight bitter edge, but balanced well with the sweet fruitiness, suitable for all of the family.
More on the flavour: This is a very pleasant and overt tasting tree blossom honey, a unique and beautiful variety with a fruity tart flavour! It is different to many other tree blossom varieties, which tend to be much more subtle.
Colour: This particular honey is a light golden yellow colour, going slightly paler when setting.
Where does the honey come from?: This variety of lime honey comes from Gorna Oryahovitsa in Bulgaria, It is situated at the northern foothill of the Tarnovo Elevations, a beautiful landscape with a rich and ancient history.
Who produces this honey?: Ivan, a young and fastidious beekeeper who is very concerned with details and getting it just right, has produced this honey. He has a systematic approach and colour codes his hives, this stops the bees getting confused and heading to the wrong hive where a fight may ensue! Ivan is going through organic certification and is in his last year, it takes 3 years to obtain.
What about the tree the honey comes from?:The lime tree, also known as linden or basswood in America, is a type of Tilia tree. They are known to produce generous amounts of sweet smelling nectar which draws bees from all around, these trees can live over 1000 years and grow up to 100 foot tall. They have been revered throughout history for over 2000 years and were known as the mystical tree of life.
Common uses: Lime honey is particularly good to use on irritated skin, it has a soothing effect and can help repair wounds, infections and eczema. It is also very versatile in different recipes, such as: cakes, cookies, desert toppings, ice creams, warm honey teas, salads and meat glazes, this is because of its tart flavour adds a real zing to dishes.
Please know that raw honey does crystalise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.
