Rossend's raw multifloral honey has a scent that strongly reminds us of beeswax and honey, very similar to fresh honeycomb straight from the hive.  The flavour of this particular multifloral starts out herbaceous and earthy followed by an almost sour, slightly sweet main flavour.  This is most likely due to the wide variety of wild herbs in the meadows and grasslands where the hives are located.  It then finishes with slightly woody notes that don't linger too long in the mouth, making way for another spoonful.

Colour: A deep and cloudy yellow, showing lots of golden and brown pollen.

Where does the honey come from? Rossend's multifloral honey comes from Catalonia in Spain. The Catalonian Pyrenees are known for their pristine forests, high peaks and heavenly meadows, rushing rivers, winding streams and thundering waterfalls.

Who produces this honey? This multifloral honey comes from Rossend. He treats honey like an art form and you can really tell. It has such a perfect consistency and the varieties range from very subtle to very overt. He has won many awards for his honey including from the well renowned iTQi (International Taste and Quality Institute) who rated several of his honey varieties at the top level in the superior taste award category.

What about the plant the honey comes from? The wild flowers and flora of the Pyrenees are vast amongst the mountainous regions, there are red poppies, purple borage, gentians, orchids, saxifrage and Pyrenean buttercups just to name a few!

Common uses: Unlike most monofloral honeys, multilfloral honeys generally do not have strong particular flavours, and therefore they are very versatile and can be used in many different recipes, including glazes for meats, in salad dressings, cakes, flapjacks, breads and teas.

Multifloral honey facts: Multifloral honey varies widely depending on the areas the bees have been feeding on - it can be wild meadows or forests or just a mix of any flora in the local area, so it is always an exciting time wondering what the next jar will taste like!

Please know that raw honey does crystalise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.
