Raw Organic Forest Honey - 1kg
Alvaro's Raw Organic Forest Honey has a wonderfully salty, savoury scent similar in ways to the sweet and savoury aroma of roasted tomatoes. The honey starts with a dark, black tea tannin-like foretaste, easing into a very sweet and delicious main taste. It has caramel notes coming in around an essence of deep, black raisins and prunes, leaving a slightly ferrous tingle on the tongue.
The strong overall flavour makes it perfect for those who love dark, strong honeys.
Colour: This honey is a medium-dark colour going ruby-red in the light.
Where does the honey come from?: This variety of oak honey comes from the Biosphere Reserve in La Rioja, Spain, a largely untouched, wild and diverse region in central to north Spain. The soil here is very rich and his hives are in a series of wild and mountainous areas within the reserve.
Who produces this honey?: This oak variety comes from Alvaro, a beekeeper with a passion for producing raw honey of the very highest quality. His honeys have a full, rich flavour typical of many products from the region.
What about the tree the honey comes from? The collective forest trees are known as bosque in Spanish. These can include chestnut and Mediterranean oak as well as beech and pine. These large trees exude a sweet sap which the bees feed on, sometimes with the help of aphids who drill into the tree bark allowing the sap to flow out more freely. Some also produce strongly-scented blossoms, which the bees love.
Common Uses: Forest honey is particularly good to use in recipes such as rich cakes, cookies, desert toppings, ice creams, warm honey teas and meat glazes. This is because of the rich, dark, molasses-like flavour it can lend.
Forest Honey Facts: Forest honey is higher in natural fructose than other types of honey, and so this serves as good source of energy. Hence, a spoon of forest honey helps to relieve fatigue immediately, and the lower glucose keeps it from setting longer than many other types of honey.
Please know that raw honey does crystalise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.

RAW ORGANIC FOREST HONEY 1KG - excellent product
Best honey I have bought so far. This is honey order no. 4. I buy a kilo jar each year. It is runny and deep in colour and flavour. Absolutely lovely. Well worth the money because it lasts me a long time. Would recommend buying before it runs out of stock.
