Raw Organic Greek Black Forest Honey : Won the Platinum Award in the 2022 London Honey Awards. Kostas bees have produced a beautiful rich and dark honey from the mature forests on Mount Pelion.
Where does the honey come from ? This honey comes from the hives of Kostas, which are placed within the ancient forests on Mount Pelion. This is one of the best places in Greece for Forest honey. The mountain is covered in Oak and Chestnut trees and the ground is very fertile resulting in honey that is complex and extremely high quality.
What does it taste like ? You will find that it has a treacly, spicy and slightly bitter flavour (which comes from the tannins - a kind of antioxidant - from Chestnut).
The Beekeeper : Asterios is one of the most genuine people you could ever meet. His aim is always to present us with the highest quality honey possible. He is lucky enough to have an amazing network of fellow artisan Greek beekeepers. This honey is bought to you by one such beekeeper, Kostas , whose bees roam mainly in central Greece. For Asterios and Kostas beekeeping is an art and they produce amazing honey and happy bees
How Raw Honey is different from Processed Honey - Raw honey generally means the honey has not been processed, it has come from the hive to the jar with minimal interference. Most supermarket honey is highly processed to make it look more attractive, usually it has been largely drained of pollen, heated and blended. Raw honey tends to vary from batch to batch, this is because it is not processed in a factory, filtered or heated to look homogeneous. Raw honey changes with the season and climate, the soil, what the bees feed on, and the nature of the colonies.
Please know that raw honey does crystalise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.
