Lovely, almost savoury taste, similar in some ways to the sweetness of roasted red peppers.
Light barely makes it through, showing just a tiny bit of dark red through the blackness.
Comes from Rioja in Spain, a largely untouched, wild and diverse region in northern Spain.
Alvaro's raw heather honey has a lovely, almost savoury aroma to it, similar in some ways to the sweetness of roasted red peppers - toasty and dark with a sourness that rounds out the normal sweetness of honey. It's very much like blackstrap molasses in this way.
The foretaste of this honey starts with a very brief hint of iron leading quickly into a beautiful, dark and fruity main flavour very reminiscent of strong figs and dried red fruits like plums. Has been likened to warm blackberry and blackcurrant jam, and finishes by leaving a refreshing sourness on the back of the tongue.
Colour: This honey is very dark - almost opaque. Light barely makes it through a 1kg jar, showing just a tiny bit of dark red through the blackness.
Where does the honey come from? This variety of heather honey comes from Rioja in Spain, a largely untouched, wild and diverse region in central to north Spain. The soil here is very rich and his hives are in a series of wild and mountainous national parks.
Who produces this honey? This variety comes from Alvaro, a beekeeper with a passion for producing raw honey of the very highest quality. His honeys have a full, rich flavour typical of many products from the region.
What about the tree the honey comes from? The heather shrub, also known as brezo in Spanish, is a small mountain-hugging evergreen which produces many flowers and loves acidic soils.
Common Uses: Heather honey is particularly good to use in recipes such as Greek yoghurt, ice creams, glazes for meats and to add a unique zing and depth to a dish.
Heather Honey Facts: This heather honey comes from the plants erica vagans and erica cinerea. Heather has 2 main genus, calluna (also known as ling) and erica or ericaceae, both are noted for being some of the most antibacterial and flavoursome honeys you can obtain.Important Note on Returns:
