Michel's Raw Organic Oak honey is a rich-tasting honeydew honey. This honey starts off quite quickly, with strong malt and caramel flavours. The high points of maple syrup combine with the richness of molasses to create a balanced overall flavour, which lingers pleasantly. The aftertaste reminds us of dried apricots and sultanas, and a light sourness can be detected for a good time after.
Honeydew honeys tend to be darker than other types of honey, have a stronger, deeper flavour and are less likely to set due to a relatively low glucose content. They also normally have higher level of minerals.
Colour: This particular oak honey is fairly dark in colour, showing a lovely pinkish red in the light.
Where does the honey come from? This variety of oak honey is collected in the mountainous massifs in the centre and west of Spain.
Who produces the honey? The bees of Michel, a traditional beekeeper who takes pride in producing honey in the old way without adding or taking away anything. Michel's hives are based in the mountain ranges south and north of Madrid.
What about the tree that the honey comes from? The Holm oak tree, also known as encina in Spain, is a smaller evergreen Oak tree which is surprisingly part of the beech family. Some oak trees can live over 1000 years! The bees love to feed on the sap that comes from the tree's acorns.
Colour: It's very dark, nearly black, with a slight hint of purple.

When your item has been shipped from our warehouse, you will be sent a tracking number via email with which you can track your parcel’s progress. If you do not receive tracking information within five days of placing your order or have any problems using your tracking number, please let us know, and we can assist.
Shipping to UK addresses
For deliveries to the UK, we use Royal Mail's 24 hour and 48 hour tracked signed services for most orders or carrier services for overweight orders. Most shipments will require a signature on delivery.
Orders placed on a working day (weekdays, excluding bank holidays) before 1pm will normally be packed and handed to the shipping company same day. Orders placed after 1pm on a working day or during non-working days will normally be packed and handed to the shipping company the following working day.
Shipping to non-UK addresses
For deliveries outside the UK, we use carrier services (the exact service will depend on your country). Delivery times will vary depending on the destination country. Most shipments require a signature on delivery.
Due to additional paperwork needed for international shipping, orders with non-UK addresses will take slightly longer to process. Orders placed on a working day (weekdays, excluding bank holidays) before 1pm will normally be packed and handed to the shipping company within two working days. Orders placed after 1pm will normally be packed and handed to the shipping company within three working days.
