Sierra Mountain Raw Honey is a very thick mountain variety coming from a biosphere reserve in Las Alpujarras, part of mainland Spain's highest mountain range. It contains Chestnut and Wild Oregano amongst other mountain flowers. It is one of the few honeys that has been awarded its own Protected Designation of Origin, which indicates the unique qualities of the environment that produces this honey.

Flavour This honey has a unique flavour due to the combination of flowers that it is collected from. You get a sense of the slight bitterness of chestnut along with a herbal aroma that comes from the wild Oregano and other herbs growing wild on the mountains, where the bees collect the nectar. It is however, reasonably mild and would appeal to children as well as adults.

Colour: Medium, Dark Brown.

Who produces the honey? Jose Orantes leads a group of beekeepers who follow an ancient bee-keeping tradition in the Sierra Nevada mountain range in Andalusia, Spain. The honey from this area is so unique that it has been awarded its own Protected Designations of Origin in Spain – which is only awarded for a very few honeys. Jose is renowned for his knowledge of beekeeping and the scientific study of honey . He is a graduate of zoology and biology.

Please know that raw honey does crystalise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.

just gorgeous!

Arrived really well packed in compostable 'chips' which were an eye opener! Amazing things. The honey was simply delicious and everyone who has tasted it agreed it was one of the most intense rich flavoured honeys we have ever tasted. I would give it more than 5 stars!

This is a more delicate flavour than many of the honeys I’ve tried from The Raw Honey Shop. All have been delicious in their own ways. The Raw Sienna Mountain honey is a runny honey but has a thicker feel than expected. Many runny honey are loose…this is more static and easy to spread. The taste is multi layered and delicate. I found myself savouring and concentrating on the flavours. Like all organic raw honeys it is sweet but not overly so like commercial honeys. It is a beautiful product.
