Raw Spring Mountain Honey - 1kg
Julio's Spring Mountain honey is a slightly milder type of mountain honey. The aroma reminds us of long grasses and apples on a warm, sunny day.
The flavour is smooth with floral high notes and a slightly acid aftertaste. It lacks the slight bitterness of darker mountain honeys, instead providing a more rounded flavour. It reminds us of meadow and wildflower honeys, and we'd recommend this for anyone looking for a raw honey without too many strong flavours. It's a great all-rounder.
It is harvested from high altitudes in the mountains of the Rosmaninhal area of Portugal, in and around the Parque Natural do Tejo, an area of natural beauty and wilderness. The Tejo river runs through the mountain landscape, creating a lush and fertile passage in the mountain woodlands and meadows. The heat and sun of Portugal combine with this great water source to create a wonderful environment for honeybees.
Colour: This honey is a dark amber colour with flecks of deep brown and red.
Please know that raw honey does crystalise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.
