There is a story behind this honey. Over the years I have been offered many samples of Sidr but when tested none of them have proved genuine. It happened, early this summer, that Thomas asked me if I was interested in a particular honey that he had about 200 kilos of - but the Greek name was not familiar. When I researched the name, I discovered it was Sidr! So I immediately decided to visit Thomas and sampled some as soon as I arrived. I found the flavour different from other tree honeys, such as Chestnut, more floral and a very pleasing flavour with many different notes (more below about the flavour below).

Then I travelled to the forests where the Lote (Sidr) Tree grows, they are in isolated and wilder parts of Greece. We drove into the forest for maybe 3 miles before coming upon a clearing surrounded by Lote Trees, where the hives are. Here the bees collect the rich nectar from the yellow flowers in the late Spring.

When I got back to the UK I sent Thomas' sample to be lab-tested, along with another sample of Sidr, that I had bought off Amazon (as a comparison).  The Amazon sample proved to be completely fake, not only was it mainly Chestnut but it had also been heated.  However, Thomas' passed with flying colours.  And this is what we present to you now. Tim's signature

Thomas' Raw Greek Sidr honey, or Lote Tree honey, is a thick honey with a rich, lavish and herbal sweet taste. It is very pleasant with a slightly sour and tangy aftertaste. It is not like dark tree honeys such as Oak or Chestnut.

The bees feed on the lavish nectar that this tree produces for a short period in the late Spring producing this legendary honey.

Colour: It has strong burnt orange colour when runny, turning a creamy, buttery yellow when crystallised.

Where it comes from: This Sidr comes from isolated forests that stretch for miles in the north of Greece.

More on this honey: Sidr Honey is among the finest variants of honey in the world. It comes with a distinctive taste, and is rich in nutrients. The fruits of the tree have high-energy content, its leaves are rich in nutrients such as iron, protein, calcium and magnesium. This honey is considered sacred in many religions.

About the beekeeper: It was brought to us by Thomas, a young Greek beekeeper, who is planning to take over his family's hives, which are in secluded forest glades in and around mountains of central Greece. He has great enthusiasm for raw honey and natural hive products.

Please know that raw honey does crystalise and this is a natural process that occurs mainly due to the natural glucose in raw honey. For more information on why honey sets visit this article and for a more scientific explanation go to wikipedia.
