It has been carefully constructed to give the best possible taste experience from the remote untouched hills and mountains of rural Greece and Australia.
Thomas' Raw Greek Vanilla Fir honey is a thick, earthy, creamy honeydew honey which has a flavour with hints of vanilla and caramel. When runny, the colour of this honey is quite light, with shades of pearl or caramel.
This honey only comes from the fir forests of Mount Mainalon in the Peloponnese in the region of Arcadia, no where else in the world. This is where the rare Black Fir tree grows.
Asterios' Raw Greek Sidr & Spring Blossom honey or Lote Tree honey, is a thick honey with a rich, lavish and herbal sweet taste. It is very pleasant with a slightly sour and tangy aftertaste. It is not like dark tree honeys such as Oak or Chestnut.
The bees feed on the lavish nectar that this tree produces for a short period in the late Spring producing this legendary honey. It has strong burnt orange colour when runny, turning a creamy, buttery yellow when crystallised.
This Sidr comes from isolated forests that stretch for miles in the north of Greece. Sidr Honey is among the finest variants of honey in the world. It comes with a distinctive taste, and is rich in nutrients. The fruits of the tree have high-energy content, its leaves are rich in nutrients such as iron, protein, calcium and magnesium. This honey is considered sacred in many religions.
This year has not been a good one for honey. Spring was very wet and the bees do not like the wet, so they stay indoors. This usually results in honey that is more mixed. So we have not been able to get any monofloral Sidr. However, we do have this Sidr with spring blossom from the forest. Much of this is from Broom, which produces a very nice antibacterial honey.
Paul's Raw Manuka honey, also known as Jelly Bush, has a smooth, floral flavour with a good bit of fragrant wild lavender, sweet and fruity with a slightly malty aftertaste and fairly clean finish, leaving just a hint of sweetness at the back of the mouth.
Please know that raw honey does crystallise and this is a natural process that occurs mainly due to the natural glucose in raw honey.
