Luisa's Raw Organic Bell Heather and Mountain Calluna Honey has a beautiful rich brown colour. When you open the jar you will be hit by a strong aroma of caramel/slightly burnt brown sugar, beeswax, and some dry woodiness.  This is an amazing tasting shrub honey, with a very potent flavour. While the texture and sweetness makes one think of fruit jam and very ripe grapes, there is a strong woody earthiness and an acidity, which prevent the honey from coming off as too sweet.  In the aftertaste, there are elements of mild bitterness.  

It is a very thick honey with a granular consistency.    

What about the plant the honey comes from? Calluna vulgaris (often known as Ling Heather) grows on a wild moorland, more than 1500 metres high, as does the Bell Heather These shrubs are small mountain-hugging evergreens that produce a strong very potent honey.

Common Uses: Calluna and Heather honey are particularly good to use for treatments on wounds, skin infections and fungal infections due to its great antibacterial properties. In fact, bandages, soaked in these honeys are now used as wound dressings in some hospitals.
