This is a premium quality cider vinegar produced in small batches by a Brighton based social enterprise using honey from The Raw Honey Shop.
The Old Tree Brewery's Apple Cider Vinegar is unfiltered and unpasteurised, It is made with a unique blend of west country apples including Yarlingtons Mill, Improved Dove and Porters Perfection giving this cider vinegar a reddish colour, which is further enhanced by a specialist pressing technique used by Tom at Old Tree.

About the producer: The Old Tree Brewery activity combines brewing and gardening with forest farming and fermentation, producing drinks that are probiotic for our gut and compost that is probiotic for the soil. They want the human scale application of these processes to transform our food system for a sustainable future.
Storage: In general, it's recommended to store apple cider vinegar in a cool place, away from heat and sunlight. Seal the bottle cap tightly after each use. You may keep it in the refrigerator if desired, but it's not necessary. Because of the high acid content, it can't go bad. The shelf life of apple cider vinegar when stored correctly is indefinite. Without contamination from other substances, it will retain its best qualities in your pantry for at least five years after the expiry date, but will probably stay good for much longer.
What is the "mother"? Apple cider vinegar is made through a two-step process. First, yeast is added to apple juice to break down the sugars and turn them into alcohol. Then, bacteria is added, which converts the alcohol into acetic acid. This bacteria is what is known as the mother, because it is the catalyst that gives rise to the vinegar. Many store-bought apple cider vinegars have the mother removed because it gives the vinegar a cloudy appearance, which can lead people to believe that the product has gone bad. But this is not the case. In fact, the mother is the healthiest part.
How can you use cider vinegar? There are many ways but here are a couple. Many people start their day with a glass of water with a teaspoon of cider vinegar. A variation of this is made also adding a teaspoon of honey, creating a drink called honegar. It is also often used in salad dressings and even as a kind of hair conditioner, reputedly raising the acid level in your scalp, which counters frizzy hair.
