Dimitris Raw Organic Greek Sidr honey, The bees feed on the lavish nectar that this tree produces for a short period in the late Spring producing this legendary honey. You will find that it has a rich, smooth texture with a dark amber colour. The taste is complex and luxurious, often described as sweet, fruity, and slightly spicy or caramel-like. It has a lingering taste, with subtle floral and earthy undertones, making it a favourite for those who enjoy more complex flavours.

What does "Active" mean in the product title? We send some of our honeys to a lab for a "Total Activity test". This test measures the total antimicrobial activity of a honey. This is done by testing a solution of a honey on a lab plate against the Staph Aureus bacteria. The honey is graded according to the amount of bacteria that the honey solution kills. Generally, the range that we see will be between 10 and 25 plus. This type of test is similar to the test used to grade Manuka Honey. The main antibacterial activity is caused by a bee enzyme that creates hydrogen peroxide in the honey. Please bear in mind that the Activity Level is at its highest when we test it and will decrease over time. This will happen faster if the honey is exposed to light and heat. Storing the honey in a dark, cool place will help to slow down the rate at which the Activity Level decreases.

Colour: It has a strong burnt orange colour when runny, turning a creamy, buttery yellow when crystallised.

Where it comes from: This Sidr comes from the dense forests of a nature reserve on the slopes of a mountain range close to the border with Bulgaria in northern Greece.

This area is part of a Natura 2000 reserve. Natura 2000 is a network of protected areas across the European Union aimed at preserving biodiversity. The mountain is known for its dense forests, including areas of lote tree (Sidr) beech, oak, and chestnut trees, as well as its alpine meadows. It's home to various species of birds, mammals, and plants, some of which are rare or endangered.

The area has a relatively untouched, wild quality, which makes it ideal for traditional activities like beekeeping, as it provides rich, diverse forage for bees. The pristine environment helps to ensure the production of high-quality, natural honey.

More on this Sidr honey: Sidr Honey is ranked as the third most expensive honey in the world after Elvish honey (a very rare Turkish honey) and Manuka. It can sell for $300 a kilo or even more. It has a distinctive taste, and is known for its antibacterial qualities. This honey is revered in Islam, and the Lote tree that it comes from is mentioned in the Qur'an for its healing properties.

About the beekeeper: This Sidr was brought to us by Asterios and his friend Dimitris, a certified organic beekeeper, who lives in a very wild area of Greece. His hives are situated deep in the forest on the slopes of the Natura 2000 reserve, which sits in the mountain range close to the border with Bulgaria. It is far from places where pesticides, herbicides and fungicides are used.


How Raw Honey is Different from Processed Honey

Raw honey is minimally processed, meaning it’s packed with natural enzymes, pollen, and nutrients that are often lost during processing. Most supermarket honeys are processed to create a uniform appearance, often being drained of pollen, heated, and blended. Raw honey changes in flavour, colour, and texture depending on the season and the flowers that bees feed on, making each batch unique.


Crystallisation in Raw Honey

Please note we cannot accept returns on this honey due to its size. The tin has travelled all the way from Greece so small dents to the tin will often appear.  If your tub or tin arrives slightly damaged and leaking, we are happy to give you a partial refund on the amount of honey you feel has been lost. Unfortunately, we cannot replace whole tins or tubs unless more then 50% of the honey has been lost. We would then request you send us pictures so that we can assess the damage and agree the replacement.
