Arfa Saira has kindly submitted a new recipe for the last few days of Ramadan. Here are the details:

Photo of oats based smoothie with peanut butter, chia seeds and other amazing ingredients to sustain you through the dayBy now you’re in the last few days of Ramadan, and with the summer heat settling in, the last thing on your mind is eating a hot meal for Suhoor!

Enter the realm of overnight oats! These delicious jars of cooling oaty goodness are a lifeline in the heat – plus you can make them around 7-8 hours beforehand, meaning you don’t have to cook for your suhoor!

Peanut butter overnight oats are a classic – but you can swap the peanut butter out with almond butter if you prefer – or replace with sunflower seed butter if you have an allergy to nuts.
Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup almond milk or coconut milk
  • 1/2 Tsp chia seeds
  • 1 Tbsp peanut butter
  • 1 Tbsp runny honey
  • handful of blueberries
  • one small sliced banana

Simply place the oats in a mason jar or small bowl and then add add in the milk and mix thoroughly, following with the remaining ingredients.

Make sure the oats have all been covered by the milk before covering the jar/bowl and chilling in the fridge for a minimum of 6 hours.

At suhoor, simply eat straight from the jar/bowl – no heating required! The oats are deliciously creamy and comforting and best of all, they are good for you!

The oats and banana contain fibre and are a form of slow-release carbs which help to curb your appetite and keep you fuller for longer.

Chia seeds are a rich source of protein and contain good fats such as omega 3’s. Chia seeds not only provide you with a natural source of energy, but they help to keep your tummy full and are really effective at absorbing toxins in your gut.

Blueberries contain powerful antioxidants which help with mental clarity – ideal when the heat makes you tired and clouds your thinking!

The peanut butter is an amazing source of protein and fat – and this combination keeps you feeling full throughout the day.

We recommend a honey like raw Rosemary or raw Lavender honey as they both have a mild taste that works well with the oats without being overpowering.
