These complement each other, as they have different properties, and cover you for all eventualities. What sets Manuka apart is that its antibacterial properties are not affected by heat. Whereas other honeys, like the Oak, are affected by heat. So the Manuka could be used in hot Lemon drinks and then the Oak in situations where heat is not used, such as directly off the spoon and gently swallowed to ease a sore throat or cough.
Please note the Manuka is crystallised and the Oak is runny.
The Manuka
What sets this Manuka apart from most other Manuka's is that it is single source. Almost all Manuka sold by the big brands is a blend from many different beekeepers. So you know nothing about how and where it was produced. With this Manuka we have full confidence in the product.
This raw Mountain Manuka honey is produced by the bees of Debbie, an artisan beekeeper, who lives in a paradise for producing premium Manuka honey. Her hives are in an area surrounded by Native Forest in the Mount Bruce Conservation Reserve. Here wild Manuka grows up the mountainside. And the Ruamahunga river provides fresh mountain water for the bees to drink.
All of Debbie's Manuka honey is independently certified in New Zealand, through a government scheme to guarantee the quality at a time when there is so much fake Manuka on the market.
About the beekeeper: Debbie came upon beekeeping by accident, after discovering two wild swarms on her land. She rapidly developed a deep love of beekeeping. Debbie has a genuine love for her bees and this helps in producing an amazing quality raw Manuka honey. Bees are sensitive and respond well when treated with kindness.
Please note: Most Manuka is creamed but this has not undergone any processing apart from basic filtering to remove hive debris. Therefore you may find that this has quite a coarse consistency with larger crystals, which you would not find in creamed manuka.
The Mountain Oak

Antibacterial raw mountain oak honey from 900 metres plus.
Very thick honey that sits solidly on the tongue, taking a moment to melt away.
Thomas' Raw Greek Mountain Oak honey has a deliciously rich and mineral treacle flavour with hints of cooked apples and plums. The aftertaste lingers only briefly with a slight sourness. The aroma is similarly fruity, reminding us of cold spiced fruit sauces. The flavour and aroma make us think this could go very well with a fruitcake or Christmas pudding.
This Mountain Oak comes from a forest that grows on a mountain round a lake close to a place called Rentina.
About the beekeeper: It was brought to us by Thomas, a young Greek beekeeper, who is planning to take over his father's hives, which are in secluded forest glades. He has great enthusiasm for raw honey and natural hive products.
More on honeydew honey: This is a dark thick runny honey – it is known as a honeydew, because it is from the sap and resin of the tree not from flower nectar. Honeydews are high in oligosaccharides, which are known for their prebiotic qualities- aiding digestion.
