This award-winning honey, with an Activity rating of 23.5, is perfect for soothing inflamed sore throats and summer coughs.

It also doubles as a gourmet honey, thanks to its bold, treacly flavour and complex layers drawn from the wild forest of Mount Kissavos in central Greece.

It’s taken a bit of persuasion, but we’ve managed to get one last batch of Kostas’ Bioactive Forest honey before the new season arrives in the autumn.

If you’ve had this honey before, you’ll know just how distinctive it is.

It’s thick and soothing, it's one you just want to take by the spoonful, especially when your throat needs a bit of help.

It’s also a gourmet treat.

A bold, treacly forest honey that layers earthy oak, chestnut, and beech with the delicate, aromatic touch of wild herbs like oregano and wild vetch.

Try it drizzled over fresh figs or manchego cheese and you’ll understand why it won Platinum at the London Honey Awards a couple of years back.

The hives are tucked away on Mount Kissavos in central Greece, a Natura 2000 protected nature reserve. A truly wild place.

When I visited, Kostas took me right into the forest, near the hives, where we ran into a 'Sounder' of wild pigs roaming. Really friendly pigs as you can see in this video.

The pigs are part of the forest biosphere.  Their digging exposes bare soil, which pioneer plants like vetch and spreads seeds.

You can literally taste the forest in this honey and all that the forest has to offer up.

Kostas has deep roots in beekeeping – he was once the leader of the beekeepers association around Larissa, and he’s known for his knowledge, dedication, and understanding what the best environment is for the bees.

In the case of the forest on Mount Kissavos, these are potent natural environments that without fail produce potent honeys, high in antibacterial elements.

This is the final batch until the autumn.

It wasn’t easy to get. Kostas doesn’t need to send it abroad – he has more than enough demand in Greece. It takes extra effort to label and ship it, so we’re grateful to Asterios, our man on the ground, for convincing him to send this one through.
