Aroma
This honey carries a delicate floral fragrance with soft herbal undertones. It is lighter and milder compared to cultivated lavender honey, making it an excellent choice for those who appreciate subtly perfumed honeys.
Flavour
Antonio's Wild Lavender Honey has a gentle and soothing taste with floral and vanilla-like creaminess. Unlike darker honeys, which tend to have strong, intense flavours, this honey is mild and smooth, making it a favourite among those who prefer delicate sweetness.
Colour
In its liquid form, this honey has a light golden-orange hue. When crystallised, it takes on a creamy, light brown appearance. Crystallisation is a natural process that enhances its spreadability without compromising quality.
Origin
This honey is harvested from the wild lavender growing in the rural areas between the Sierra de Guadarrama and the Sierra de Gredos in Spain. The region’s wild, uncultivated lavender bushes thrive in this pristine environment, providing bees with a pure and abundant nectar source. The honey captures the essence of these high-altitude landscapes, delivering a uniquely mild yet aromatic taste.
Producer Story
Antonio is a pioneer of organic beekeeping in Spain. His hives are mainly in Spain’s Sierra de Guadarrama north of Madrid, with some in Portugal to adapt to climate challenges. Working with his son Dani and son-in-law Ruben, he produces certified organic raw honeys (chestnut, oak, lavender, eucalyptus) and teaches beekeeping. He is sought worldwide for his ethical, organic practices.

How to store your honey
To preserve its natural potency and qualities, store the honey in a cool, dark place. Light and heat degrade the enzymes that contribute to antibacterial activity. Keeping it away from light and high temperatures helps maintain its flavour, texture, and active properties.
Why Raw Honey is Different from Processed Honey
Raw honey means it comes from the hive to the jar with minimal interference. Most supermarket honey is processed to look attractive—drained of pollen, heated, and blended. Raw honey varies from batch to batch because it is not factory-processed, filtered, or heated to be uniform. It changes with the season, climate, and bee forage. We update this fact sheet based on the current batch.
Crystallisation
Please note that raw honey crystallises naturally (therefore we cannot accept returns on crystallised honey). We list each honey as runny or crystallised based on our best knowledge, though the state may change quickly. For details, check our Runny Honey Guide or the Wikipedia section on honey crystallisation.
