Dimitris describes the honey from this area as “more than organic” due to the untouched biodiversity and the dedication to keeping the process entirely natural.

We send this honey to a lab for a "Total Activity" test, which measures antimicrobial potency against Staph aureus bacteria. An Active 20 rating is exceptionally high—comparable to high-grade Manuka honey. The activity is largely due to an enzyme that produces hydrogen peroxide. Please note: the activity level is highest at testing and naturally declines over time, especially with light and heat exposure. Store in a cool, dark place to help maintain potency.
