Who produces the honey? The bees of Antonio Simon, a 4^thgeneration beekeeper who takes pride in producing honey in a traditional way without adding or taking away anything. Antonio's hives are mainly based in the mountain ranges of north of Madrid. His beekeeping practices and the land he has his hives on have been certified as organic by the Committee of Organic Agriculture in Madrid.

Raw Organic Lavender Honey: This is a very light and pleasant herb flower honey, it has a warm and soothing taste of creamy florals.- Lavender honey is a favourite of many due to its beautiful warm flavour. The oil from lavender is widely used as an essential oil in aromatherapy, because it is said to aid relaxation and sleep.

Where does it come from: This variety of Lavender honey comes from the organic Lavender fields in Brihuega, Guadalajara. Here the air is filled with the aroma of Lavender.

Colour: A lovely deep amber colour turning to a light buttery yellow colour when crystallised.

More lavender honey Facts: Lavender honey is good for protecting and soothing abrasions and burns (although obviously see your doctor if it is a bad abrasion or burn). It is also especially good poured over cheese! And because it is so mild children love it on its own and appreciate the subtle taste.

Antonio's Raw Organic Rosemary Honey: has always been the best rosemary we could get. This batch is even better. In fact, it is exceptional, so good it won the top Platinum award in the London Honey Awards.

Where does the honey come from: This variety of rosemary honey comes from Patones – which is in the foothills of the Sierra de Guadarrama mountain range in Northern Spain – an area with perfect conditions for wild Rosemary.

Colour: This honey has a light and subtle flavour of rosemary, very delicate yet quite sweet with a soft floral note. It is the most popular honey in Spain.

More Rosemary honey facts: used in skin care. It has a fresh clean aroma and its soothing composition helps aid skin recovery from blemishes, acne and spots. It is also extremely versatile in different recipes, it is particularly good in a salad dressing.

Antonio's Raw Organic Orange Blossom honey is a very pleasing and light honey, a favourite of children, it has just a subtle and delicate taste of orange and a hint of creamy vanilla.  It's a great introduction to the world of raw honey thanks to its easy-going, floral sweetness.

What about the plant this honey comes from? The orange tree also known as Azahar in Spanish is the beautiful fruit producing citrus tree which boasts dazzling white blossoms when flowering.

Common Uses - Orange blossom honey is particularly good to use in different recipes, such as: salads, yoghurts, glazes for meats and to add a unique zing to a dish.

 Crystallisation:-  Please know that raw honey does crystallise and is a natural process of raw honey (therefore we cannot except returns on honey that may have crystallised).
