Raw Organic Greek Vanilla Fir Honey – Creamy, Rare & Luxurious

This rare and highly prized honey is harvested from Black Fir trees high in the Panachaiko Mountains of Greece by Kostas, a young organic beekeeper. Collected at altitudes above 1,500 metres in a Natura 2000-protected area, it is one of the rarest honeys in Europe. Thick, smooth, and indulgently creamy, it carries deep earthy notes with natural hints of vanilla and caramel. With its naturally low glucose levels, it rarely crystallises—making it one of the most unique and sought-after honeys in the world.

Aroma

Rich, resinous and earthy, with subtle warm undertones of vanilla and caramel. The scent reflects the high-altitude fir forests where it is gathered.

Flavour

A luxurious honey with remarkable smoothness. Expect deep earthy tones, layered with caramel sweetness and a soft hint of vanilla. Complex, indulgent, and long-lasting on the palate.

Colour

Opaque golden-brown with a natural sheen. Its thick, creamy body reflects its low moisture content, distinguishing it from other Greek honeys.

Origin

Sourced from Panachaiko Mountain in the Peloponnese at over 1,500 metres altitude. This region, part of the Natura 2000 network, is protected for its biodiversity and pristine environment. The bees forage exclusively among Black Fir trees (Abies cephalonica), producing a honey that embodies the purity of its untouched landscape.

Producer Story

Kostas belongs to a new generation of Greek beekeepers who combine tradition with organic principles. Committed to sustainability and bee welfare, he tends his hives in remote, wild areas where nature thrives in balance. For him, beekeeping is about harmony with the land—never taking more than what nature provides.

Common Uses

  • Drizzle over Greek yoghurt, porridge, or oatmeal
  • Spread on fresh artisan bread or warm brioche
  • Perfect topping for desserts such as panna cotta, cheesecake, or vanilla ice cream
  • Use in gourmet marinades or salad dressings
  • A refined addition to cheese boards or charcuterie platters

How to store your honey

Store in a cool, dark place away from heat and sunlight to preserve its beneficial enzymes, flavour, and natural properties.

Why Raw Honey is Different from Processed Honey

Raw honey is minimally filtered and unheated, retaining all its natural enzymes, pollen, and nutrients. Unlike supermarket honey, which is often pasteurised and blended, raw honey varies with each season and batch, reflecting the forage of the bees and the uniqueness of its environment.

Crystallisation

Unlike most honeys, Vanilla Fir honey rarely crystallises due to its very low glucose content. If it does set, simply place the jar in warm water to return it to a smooth texture. Learn more in our Runny Honey Guide or read about honey crystallisation.
